Garlic & Chilli Paste

Have a WMF (Weapon of Massive Flavours) at the ready in your freezer 24/7 with this easy to prepare paste.

You’ll need:

  • 1 tablespoon of Fresh garlic, peeled and crushed
  • 1½ tablespoons of Long red chillies, thinly sliced with seeds

Add chopped chillies into a mortar and pestle and pound for 10 seconds before adding chopped garlic. Pound for further 10 seconds until it forms a chunky garlic and chilli paste. Done!

GarlicChilliFinishHow hot you make it is up to you. I play it safe and keep it fairly mild, as it is less likely to offend. Bump extra chillies into the mix if you want your tongue to dance gangnam style.

Make up a decent amount of this paste and freeze it in an unused ice cube tray.  Release from the tray after frozen and lock them up in an airtight bag for easy access. The multicultural marriage of garlic and chilli is great in stir-fries, dressings and marinades, particularly in the Ground Beef with Thai Basil classic dish, as well as any other delicious Thai concoction you can imagine.
